Christmas Cooking Vlog | Healthy Christmas Cake & Mulled Wine | Camera Cuisine

Ok, so this time around your X’Mass will not be so sinful.
I got my 2 health conscious foodie friends (Nidhi - Insta @nidhi_health_moron) & Anjali - Insta @evergreen_fitfood again to make our Christmas Merry.

Present there a Sugar Free, Flour Free, Gluten Free Christmas Cake paired with a spiced Mulled wine…

Recipe | Healthy Christmas Cake | Camera Cuisine

Ingredients:
• 500 gms mixed dry-fruits (Currants, Raisins, Apricots, Cranberries, Dates)
• 75 gms walnuts
• 1 orange
• 125 gms almond meal
• 65 gms coconut flour
• ½ tsp baking soda and ½ tsp salt
• 3 tsp mixed spice: Nutmeg, Cardamom, Black pepper (Optional)
• 1 tsp cinnamon powder
• 5 eggs
• 50 gms butter or coconut oil (melted)
• 60 ml liquor of your choice
For the glaze
• 2 tabsp organic honey
• 2 tabsp liquor of your choice

Method:
1. In a bowl add Almond meal (flour), Coconut flour, Baking soda, Salt, Walnuts,
Orange zest & mix well
2. In another bowl whisk the Eggs, Coconut oil, Orange juice, Liquor,
Vanilla extract together.
3. Now add all the dry-fruits to this mix & fold.
4. Combine the dry mix with the wet mix & fold well.
5. Grease the tin with coconut oil & place the parchment paper. Spoon the batter on it. Even the top with the back of a spoon or a spatula.
6. Pre-Heat the oven at 180F for 10 mins. Reduce the temperature to 150F
& now place the tins for baking. Bake for 35 mins or until the top is brown.
7. For the glaze, prick the cake with a tooth pick & pour the organic honey
& liquor mix.
8. Garnish with Apricots, Cranberries and make your Christmas Merry!

Recipe | Mulled Wine | Camera Cuisine

Ingredients:
· 1 bottle (750ml) of red wine (choose something fruity but not too sweet and expensive—Merlot, Zinfandel, or Cabernet Sauvignon all work well)
· 1 orange/ kinnow, sliced into rounds
· 2 kinnow for freshly squeezed juice
· I Lemon sliced into rounds
· 1/4 cup apple cider (optional)
· 1/4 cup honey or Maple Syrup
· 8 whole cloves
· 2 cinnamon sticks
· 2 star anise
· 2 bay leaves
· 2 cardamoms
· Orange & Lemon zest
· 1/2 teaspoon, fresh ground nutmeg
· Few drops of Vanilla Extract
· Garnishes: citrus slices (orange, lemon and/or lime), extra cinnamon sticks

Method:
1. Combine honey, cider and orange juice into a deep saucepan or a wok.

2. Mix all ingredients well and let it cook on medium heat till the honey dissolves in well

3. Add to this mix the sliced fruit, zests and all spices :cloves, cinnamon sticks, bay leaves, nutmeg powder and stir in well

4. Now add the wine into the boiling juices and mix well. Let this mix simmer on low heat for 30 minutes

5. Making sure that the wine does not boil, so the alcohol does not cook out.

6. You’ll love the aromas of the spices being cooked.

7. Strain the liquid and ladle the wine into cups / wine glasses while its warm

8. Garnish with more fruit, star anise, and cinnamon sticks if desired

Enjoy!

Note: you are supposed to heat honey in general as it looses all its goodness. Even though here we are using it as a sugar replacement, I much rather use maple syrup or more of the orange juice

Variations :

· You can use a juice and a fresh fruit of your choice. Cranberry, pomegranates will work super too

· If the temperature is colder, feel free to add ½ a cup of brandy as well

· You can glaze with maraschino cherries too

· Spices can be altered to your taste as well eg. don"t use nutmeg if you don"t like the taste

· Serve it warm or room temperature. I prefer & recommend warm though
