Organic Garden Cooking - Creamy Cucumber Dill Salad Recipe with Calendula and French Tarragon
Oh how I love cucumbers! This is a great way to use your onions and dill from the spring garden as your cucumbers are starting to mature. I just love the flexibility of harvesting fresh veggies at various stages of growth in my garden. For this salad, I picked my cucumbers when they were about half the size of maturity.
The dill is perfect right now, as is the French Tarragon (only I wish I could grow tons more! ).
Lighten this dish up by using Greek yogurt instead of heavy sour cream. Greek yogurt is a wonderful replacement for sour cream and healthy to boot!
