Organic Vegetable Curry with home-made curry powder. Recette Currie de légumes/lait coco
Curry is a generic term used originally to describe a Westernised version of the great and complex cuisines of South Asia. Only recently however, we have come to understand that, the art of the ancient Mughlai spice blenders went far beyond the culinary to embrace areas of both physical and mental health in the prevention and treatment of disease. Turmeric, for example, has many medical applications, two of them being:- the prevention of Alzheimers and topically, post Fukushima, in enabling the excretion of radionuclides from the body
Last year we began to grow the spices ourselves. If you want to try this, make a start with fennel, garlic and coriander or fenugreek, which can even be grown in pots on a window ledge or balcony. http://www.youtube.com/user/Organikmechanic?feature=mhum#p/u/0/br5sE8Pg6Vc shows how to build an inexpensive green house from recycled, materials to grow most of the spices used in this recipe. We also include a recipe for chutney, which again, like curry, is an interpretation of an ancient recipe and was reputedly created by a 19th century British Army officer. In Bangladesh, chutney is usually eaten during the đal course, which is the most substantial of the traditional courses and often eaten with rice, in the recipe below we use it in this way. For accompanying drink we offer Lassi -- a traditional Punjabi yoghurt-based drink. The rice we use is basmati -- organically produced in the Punjab but for those who would like a change the link below leads to the recipe for delicious chick pea fritters from the great Indian chef and actress, Madhur Jaffrey. Curry is a brilliant organic meal, it uses local in season foods, spices which aid digestion and have healing powers and is even better when reheated and eaten the next day. Be Creative and Enjoy!

Recipes/Recettes:
For the curry powder Un riche mélange d"épices
5 tsp/c.c. coriander seeds/graines de coriandre
7 tsp/c.c. cumin seeds/graines de cumin
1 tsp/c.c. mustard seeds/ graines de moutade
2 tsp/c.c. fennel seeds/graines de fenouil
all the above to be dry fried until they crackle/rôti à sec jusqu"à ce qu"ils faisent un bruit.
Chilli -- Piment (maison) I use our home-grown and dried Habanos and Cayenne.
3 whole black peppercorns/baies de poivre noir
- Crush all the above using a pestle and mortar then add:- concassez le tout puis ajoutez
1 tsp/c.c. fenugreek powder/fenugrec
3 tsp/c.c. tumeric powder/curcuma
For the Vegetable Curry (serves four) you will need : 1 kilo of mixed vegetables/ mélange de légumes
1 can of coconut milk/une boite de lait de coco, 6-7 medium onions, 3 cloves of garlic, 2 cms fresh ginger root. Start by cooking the onions, garlic and ginger root in 4 tablespoons cooking oil for 10 mins. Add at least 10 teaspoons of curry powder and cook for a few more minutes before adding the coconut milk and then the vegetables. Cook slowly until very tender./ Commencez par cuire les oignons, 3 gousses d"ail, 2 cm racine de gingembre frais dans 4 cuillères à soupe d"huile de cuisson pendant 10 min. Ajouter au moins 10 cuillères à café de curry powder et laisser cuire pendant quelques minutes encore avant d"y ajouter le lait de coco et ensuite les légumes. Cuire lentement jusqu"à ce que c"est tendre.
For the Banana Chutney : 3-4 ripe bananas/bananes , a handful of dates/ Une poignée de dattes
150 ml cider vinegar/vinaigre de cidre, 150 g sugar/sucre, 1 tsp/c.c. cumin. Disolve sugar and spice in vinegar, add fruit, cover and cook 15mts.

Lassi -- 300ml unsweetened yogurt/ yaourt nature sans sucre, 50 g sugar/sucre, 1.2 litres water/de l"eau
