Best Collard Greens recipe how to cook Southern Soul Food heathy organic low carb low fat pot licker

Best Collards you have ever tasted AND they are good for you too. this recipe will work for any type of "heavy" or winter greens including turnip, mustard or kale.... but I like Collards the best.
this is very similar to the Southern Style greens at Mary Mac"s and PittyPat"s Porch recipes in Atlanta BUT is way better for you with out the huge amounts of Pork and fat. this is LOW CARB LOW FAT . ....but you can add what ever you want!!!

our traditional new years day meal is beans rice sausage and a mess of greens Southern Soul Food original recipe

Recipe is easily modified for low fat healthy low carb or add some extra sausage or bacon drippin"s for a supper taste treat.

1 bunch collard Greens Washed, deveined and cut into 1"x3" strips

1 cup chicken stock - if you are going to add meat you may want to use a low or no fat stock if not you should use a "regular" stock. experiment and see what works best for you

2 tablespoons salt

2-3 quarts water

optional - sausage, ham hock, bacon or bacon drippin"s, ham, hambone

bring to a hard boiler then reduce the heat and simmer for 1.5-2 hours

you CAN add hot sauce but I like it better at the table ...IF you want to use some in the batch I would recommend a medium heat red like franks ..

Franks hot sauce Tabasco red rooster texas pete mess-o-greens mess of collards
