Chef Demo - Vietnamese Style Marinated Bamboo Shoots Salad

Chef Demo by Joey Ward of Gunshow. Chef Ward throws his take on bamboo shoots with this wonderful blend of Minced Shallots and ginger. Green Garlic from Heirloom Gardens, Thai bird"s eye chilies, sugar, kosher salt, fish sauce, fresh limes make up the Nuroc cham. For the salad Chef Ward uses fresh bamboo shoots from Indian Ridge, daikon radish, carrots, yellow onion from McMullan Family Farms, fresh Thai basil and mint from Heirloom Gardens, chopped toasted peanuts, confitted smoked ham hocks from The Spotted Trotter and chilled shrimp.

The Peachtree Road Farmers Market takes place on Saturday mornings beginning April 5th, rain or shine, until December 13th.
